Potato Flaked Striper Fillets

- 2 lbs Stripper (or any firm white fish) shopping list
- 2 lemons (or lemon juice from concentrate) shopping list
- 2 Cups Instant potato Falkes shopping list
- 2 eggs (beaten) shopping list
- Old Bay Seasoning (red-yellow-&blue tin) shopping list
- cayenne pepper shopping list
- canola oil shopping list
How to make it
- Pat fillets dry with paper towels
- Sprinkle rach fillet with lemon juice
- Rub fillet liberally with Old Bay and follow with cayennepepper (to taste)
- Turn fish over and repeat.
- Cover & refrigerate for at least 1 hour.
- Dip chilled fillets in beaten egg, then coat liberally with instant potatoes.
- Hint:hand crushed flakes make them stick better to the fillets,
- Place coated fillets into shallow hot canola oil/
- Fry 4-6 mins per side (depending on thickness)
- No need to drain fillets Canola oil is good for you!
- Serve with tartar sauce(it will cool down the cyenne if you used too much)
