How to make it

  • Pat fillets dry with paper towels
  • Sprinkle rach fillet with lemon juice
  • Rub fillet liberally with Old Bay and follow with cayennepepper (to taste)
  • Turn fish over and repeat.
  • Cover & refrigerate for at least 1 hour.
  • Dip chilled fillets in beaten egg, then coat liberally with instant potatoes.
  • Hint:hand crushed flakes make them stick better to the fillets,
  • Place coated fillets into shallow hot canola oil/
  • Fry 4-6 mins per side (depending on thickness)
  • No need to drain fillets Canola oil is good for you!
  • Serve with tartar sauce(it will cool down the cyenne if you used too much)
