Lemony Chicken In A Flash

Delicious and easy lemony chicken. Great taste and tender chicken and only 260 calories a serving.
Ingredients
- 10 boneless,skinless chicken breasts shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 1 medium red onion,sliced shopping list
- 3 Tbs extra virgin olive oil shopping list
- 2 jars (8oz ea.) quartered artichokes,drained shopping list
- 1 lemon,cut in 10 slices shopping list
- 1 tsp each oregano and thyme shopping list
How to make it
- Heat oven to 350 degrees. Season chicken with salt and pepper. In skillet over medium - high heat,cook onions in 1 Tbs oil 5 mins,stirring occasionally;remove from skillet.
- In same skillet over med-high heat,cook chicken (in batches,if necessary) in remaining oil 5 mins.
- Divide onions,chicken and artichokes between 2 baking dishes coated with spray. Top with lemon slices and sprinkle with oregano and thyme. Cover with foil and bake 10 to 15 mins.
