Ingredients

1 (16 oz.) package of frozen mixed vegetables

3 cubed potatoes

2 lb. of cubed beef stew meat

2 qts. tomato juice

1 tsp. of dried parsley

1/2 tsp. of dried oregano

1/2 tsp. of dried basil

salt to taste

ground black pepper to taste

Directions

First you want to pour in tomato juice into a large pot.

Now add in the veggies and potaotes.

You want to let this simmer.

While the veggies are simmering, brown meat in frying pan.

Then you can add in the simmering juice and veggies to this.

Also add in the parsely, oregano, basil, and the salt and pepper.

Stir and cover for about 2-3 hrs.

Ladle up and serve.

I love adding stew meat to vegetable soup but unless I pressure cook it I can't seem to get it tender. I noticed in your recipe that you suggested browning meat and adding to veggies and you didn't mention pressure cooking. I cut the meat into small pieces and it's still tuff hours later if I don't pressure cook. Have any idea what I could be doing wrong? Thanks!
