How to make it

  • First you want to pour in tomato juice into a large pot.
  • Now add in the veggies and potaotes.
  • You want to let this simmer.
  • While the veggies are simmering, brown meat in frying pan.
  • Then you can add in the simmering juice and veggies to this.
  • Also add in the parsely, oregano, basil, and the salt and pepper.
  • Stir and cover for about 2-3 hrs.
  • Ladle up and serve.

    I make mine in a crockpot and let it cook all day. The meat is usually very tender.

    I love adding stew meat to vegetable soup but unless I pressure cook it I can't seem to get it tender. I noticed in your recipe that you suggested browning meat and adding to veggies and you didn't mention pressure cooking. I cut the meat into small pieces and it's still tuff hours later if I don't pressure cook. Have any idea what I could be doing wrong? Thanks!
