How to make it

  • Preheat oven to 325F.
  • Pare potatoes and cut into balls with a melon-ball cutter. Cook, covered in boiling salted water in a medium sized sauce pan for 10 mins, or until almost tender. Drain well.
  • Pour enough vegetable oil into bottom of a jelly roll pan to cover the bottom; stir in salt. Place potatoes in a single layer in pan, tossing to coat all with oil.
  • Bake, turning several times, for 1 hour or until potatoes are tender and golden.
