Apricot Dessert

- Dry apricots-500gms shopping list
- sugar-1 cup shopping list
- Full fat milk-500ml(can use low fat milk too for the health conscious) shopping list
- fresh cream-1tbsp shopping list
- whipped cream for garnish(optional) shopping list
How to make it
- 1.Soak the apricots in lukewarm water for 3-4 hrs.the apricots should be fully submerged in water.
- 2.After soaking it for 3-4 hrs,drain out the water and deseed the apricots,this should not be very difficult since the apricots would have softened by now.
- 3.Do not throw away the seeds,crack them open and collect all the kernels from the inside & keep them in a bowl .discard the shell
- 4.Mash half of the quantity of the apricots into a pulp.
- 5.Boil the milk in a deep bottomed pan for 2 mins,add both the whole apricots and the mashed ones
- 6.Continue to boil over low heat,stirring from time to time
- 7.Mix in the sugar&continue to stir till the sugar fully dissolves & the apricots are cooked and soft.
- 8.Lastly mix in the fresh cream and the apricot kernals.
- 9.Serve at room temperature or cold with sweetened whipped cream or vanilla ice-cream
