Chicken Florentine

- 8 boneless, skinless chicken breast shopping list
- 3-4 cans of stewed tomatoes (recipe called for crushed) shopping list
- 2 cans spinach (recipe called for fresh, I did not have that on hand) shopping list
- oregano shopping list
- basil shopping list
- parmesan cheese shopping list
- Tablespoon of olive oil shopping list
How to make it
- You can do on stove top, I used my electric skillet!
- Heat olive oil in your pan on med heat.
- Brown chicken on both sides (about 6 minutes per side varying on thickness of your chicken breast.)
- Drain off excess oil..(optional.)
- Pour stewed tomatoes over chicken.
- Sprinkle oregano and basil over chicken and tomatoes.
- Top with spinach.
- Let simmer until chicken is cooked thoroughly.
- Serve with a sprinkling of Parmesan cheese!
