Cranberry Chutney Chicken

- 1 tbsp virgin olive oil shopping list
- 4 Boneless, skin less chicken breasts. shopping list
- 4 med sized onions sliced thinly shopping list
- 1/2 398 mL whole cranberry sauce shopping list
- 2 tbsp red wine vinegar shopping list
- 1/2 tsp dried thyme leaves shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp Freshly ground black pepper shopping list
How to make it
- In a large frying pan, heat oil over medium heat..
- Add chicken: cook until golden, 4 min. per side.
- DO NOT COOK CHICKEN THROUGHLY.
- Transfer to large plate
- Add onions to frying pan, stirring occasionally, until softened & golden, about 10 min.
- Stir in cranberry sauce, 1/2 cup water, Red Wine vinegar, thyme, salt & pepper.
- Cook, stirring occasionally, until sauce has reduced by 1/2, about 5 min.
- Return chicken to frying pan.
- Reduce heat to Medium-low, cover & cook, turning chicken, until chicken is cooked throught, about 8 to 10 min
- Serve with; "Whole Wheat Couscous"
