How to make it

  • In a large frying pan, heat oil over medium heat..
  • Add chicken: cook until golden, 4 min. per side.
  • DO NOT COOK CHICKEN THROUGHLY.
  • Transfer to large plate
  • Add onions to frying pan, stirring occasionally, until softened & golden, about 10 min.
  • Stir in cranberry sauce, 1/2 cup water, Red Wine vinegar, thyme, salt & pepper.
  • Cook, stirring occasionally, until sauce has reduced by 1/2, about 5 min.
  • Return chicken to frying pan.
  • Reduce heat to Medium-low, cover & cook, turning chicken, until chicken is cooked throught, about 8 to 10 min
  • Serve with; "Whole Wheat Couscous"
