Potato salad with tuna

Very easy to make and really comforting for a quick lunch or dinner.
Ingredients
- 5-6 potatoes shopping list
- 1 can tuna shopping list
- 1 cup mayonnaise shopping list
- 1 tbsp olive oil shopping list
- 2 tbsp finely chopped spring onion and parsley shopping list
- lemon juice (optional) shopping list
- salt and black pepper to taste shopping list
How to make it
- Rinse the potatoes and cook them in water and salt.
- Peel the cooked potatoes and cut them into small pieces.
- Put the potatoes in a bowl and add the previously drained tuna.
- Add the mayonnaise, the oil, the onion, the parsley, the lemon juice, salt and pepper to taste.
- Mix all ingredients well, cover the bowl with a plastic film and keep the bowl in the fridge until serving.
