Yummy Moroccan Lentil Soup

- * 2 tablespoons butter shopping list
- * 2 tablespoons olive oil shopping list
- * 1 large onion, finely chopped shopping list
- * 1 small green pepper, finely chopped shopping list
- * 2 medium carrots, shredded shopping list
- * 1 1/2 cups peeled and finely chopped eggplant shopping list
- * 4 cloves garlic, minced shopping list
- * 2 full teaspoons cumin shopping list
- * 1 teaspoon curry powder shopping list
- * 1 teaspoon allspice shopping list
- * 1 1/2 teaspoons cinnamon shopping list
- * 1 teaspoon red pepper flakes shopping list
- * 300 ml water shopping list
- * 1 tablespoon vinegar shopping list
- * 1 liter chicken broth shopping list
- * 1 can diced tomatoes, drained shopping list
- * 1 16-ounce bag dried lentils, any variety shopping list
- * 1/2 teaspoon salt shopping list
- * plain yogurt or sour cream, for garnish shopping list
- * Chopped fresh cilantro, for garnish shopping list
How to make it
- In a large stockpot over medium heat, combine the butter and oil and stir until the butter has melted. Add the onions, green pepper, carrots, eggplant and garlic. Stir well. Add the cumin, curry powder, allspice, cinnamon and red pepper flakes. Saute, stirring, until the vegetables have softened, about 10 minutes.
- 2.Add water, chicken broth, vinegar, tomatoes and lentils, and bring to a boil. Reduce heat to low, and simmer, uncovered, 1 hour, or until the lentils have softened. Season with salt. To serve, garnish each bowl with a dollop of yogurt or sour cream and a sprinkling of chopped cilantro.
