Veggie Fried Rice

- 2 tbps peanut oil or any oil you have on hand shopping list
- green beans cut to bite sized pieces shopping list
- sliced mushrooms shopping list
- 3 cloves of garlic finely chopped shopping list
- 1 onion finely chopped shopping list
- broccoli cut to bite sized pieces shopping list
- 2 eggs shopping list
- 2 cups of pre-cooked rice (brown or white) (room temp, crumble w/ fork, set aside) shopping list
- 1/4 cup oyster sauce or soy sauce shopping list
- salt and pepper to taste shopping list
- 1 tsp sriracha hot sauce (optional) shopping list
How to make it
- In a hot skillet, fry two eggs over medium or to your liking then set aside.
- Add oil to skillet and fry onions and garlic till onions are transparent
- Then add green beans, mushrooms, broccoli or other vegetables to the oil and stir fry till Broccoli is a bit tender.
- Add the rice first and mix thoroughly with veggies then add oyster sauce and stir till rice is coated well and browned.
- Continue to stir fry on high and add salt, pepper and hot sauce to taste.
- Serve immediately with egg on top
- Enjoy!
