Quick and Easy Red Velvet Cupcakes

- CAKE: shopping list
- 2 1/2 c flour shopping list
- 1/2 c unsweetened cocoa pwdr shopping list
- 1/2 tsp salt shopping list
- 1tsp baking soda shopping list
- 1c (2sticks) butter (I use smart balance) shopping list
- 2c sugar (I use splenda) shopping list
- 4 eggs shopping list
- 1c sour cream (I use FF) shopping list
- 1/2 c milk (I use FF) shopping list
- 1oz red food coloring shopping list
- 2 tsp pure vanilla extract shopping list
- FROSTING: shopping list
- 1pkg cream cheese (1/3 LF CC) shopping list
- 1/2 stick butter shopping list
- 2tbsp sour cream (FF) shopping list
- 2tsp vanilla extract shopping list
- 16oz confectioner's (pwdrd) sugar shopping list
How to make it
- FOR CAKE: Beat butter and sugar, med speed ~5min, till fluffly, beat in eggs one at a time.
- Mix in sour cream, milk, food color, and vanilla.
- Gradually beat in flour on low speed until blended (try not to overbeat)
- Pour mixture into muffin cups ~2/3 full and bake 350d for 20-25min
- FROSTING: Beat softened pkg of cream cheese, softened 1/2 stick of butter, 2tbsp sour cream, and 2tsp vanilla extract until light and fluffy. Gradually beat in 16oz of confectioner's sugar on med speed till smooth
- Ice cupcakes after they've cooled ~5min out of pan. YUMMO
