Creamy Chicken and Asparagus

- 1 tbsp sesame oil shopping list
- 1 red bell pepper, cut into thin slices shopping list
- 2 large, boneless chicken breasts, cubed shopping list
- 6 scallions, cut into pieces shopping list
- 1 lb asparagus, trimmed and cut into 1 inch pieces shopping list
- 3/4 cup chicken broth shopping list
- 1/2 cup chicken broth shopping list
- 2 tbsp fresh lemon juice shopping list
- 1 tsp grated lemon zest shopping list
- 1/2 tsp kosher salt shopping list
- 1/2 tsp italian seasoning shopping list
- 2 tsps cornstarch shopping list
- 1 tbsp water shopping list
- 2 tbsp sour cream (with chives) shopping list
- 1/4 cup grated parmesan cheese shopping list
- rice or fettuccine shopping list
How to make it
- In a large skilled, heat sesame oil until hot but not smoking
- Add bell pepper and cook unti crisp and , tender (about 2 minutes)
- Add chicken and scallions, stiring to coat
- Add asparagus, 3/4 c broth, lemon juice, zest, salt and seasoning, cook until asparagus is crisp and tender (about one minute)
- In a cup. combine cornstarch and water, stir to blend
- Add remaining 1/2 cup chicken broth
- poor cornstarch mixture over chicken, stir in until sauce is thickened
- Remove from heat and stir in sour cream
- Serve over rice or fettuccine
- Enjoy! :)
