Stuffed Acorn Squash

- 2 medium acorn squash shopping list
- Olive oil shopping list
- 1 pkg Stove Top Stuffing Mix® or any leftover stuffing, enough to serve 4 shopping list
- Leftover giblet, turkey or pork gravy shopping list
- Pan spray shopping list
How to make it
- Preheat oven to 400F deg. Place rack at the middle level.
- Split acorn squash in half, lengthwise. Scoop out seeds; Take a tiny slice off the side bottom of each squash half, so that it will sit stable for baking and serving.
- Place the 4 squash halves on a sprayed, foil-lined jelly roll pan; brush cut surfaces and insides of squash with olive oil. Place in the oven.
- Bake for 1 hour.
- Meanwhile, prepare the stuffing mix as directed, and heat the gravy.
- At the end of 1 hour, remove the jelly roll pan from the oven. Divide stuffing evenly and spoon into the 4 squash halves, heaping it slightly.
- Place the pan back into the oven for another 15 minutes, allowing the squash to finish baking to a soft texture and for the stuffing to heat through.
- When ready to serve, spoon some gravy over, if desired.
