How to make it

  • Preheat oven to 400F deg. Place rack at the middle level.
  • Split acorn squash in half, lengthwise. Scoop out seeds; Take a tiny slice off the side bottom of each squash half, so that it will sit stable for baking and serving.
  • Place the 4 squash halves on a sprayed, foil-lined jelly roll pan; brush cut surfaces and insides of squash with olive oil. Place in the oven.
  • Bake for 1 hour.
  • Meanwhile, prepare the stuffing mix as directed, and heat the gravy.
  • At the end of 1 hour, remove the jelly roll pan from the oven. Divide stuffing evenly and spoon into the 4 squash halves, heaping it slightly.
  • Place the pan back into the oven for another 15 minutes, allowing the squash to finish baking to a soft texture and for the stuffing to heat through.
  • When ready to serve, spoon some gravy over, if desired.
  • Enjoy!!
