How to make it

  • Place the chopped squid in a pan (include the ink sacs).
  • Pour in the vinegar. You may add more if you want a stronger taste.
  • Add in the garlic, onion, and finger chili.
  • Bring to boil before stirring.
  • Season with salt or fish sauce and ground black pepper.
  • Add in the eggplants.
  • Pour in the coconut cream.
  • Add the fresh Spinach.
  • Bring to boil without covering the pan. boil for about 30 seconds only. Overcooking the squid makes it tough.
  • Serve hot.
