How to make it

  • Beat the eggs & add the potatoes, onion, salt, pepper & crushed cracker.
  • Heat 1/2 the oil or butter in a frying pan & the potato mixture into it by the tblsp.
  • Fry until brown on both sides.
  • Keep pancakes hot until all are fried, add more oil if required.
  • Can be served plain or with sour cream or any table syrup
  • Serves 8
