How to make it

  • First you need to melt 4 tablespoons of the butter in a pan over medium flame.
  • Then you can add the leeks, cover with a lid for approx. 5 minutes.
  • Next you can add the 5 c. of apples and cook for approx 5 more minutes
  • Then add the stock and the potatoes; let this boil; then you will reduce heat approx 45 minutes.
  • Then you need to puree in blender.
  • You will then stir in the creme fraishe or cream, the Calvados and cinnamon and season to taste with salt and pepper
  • Chill in the refrigerate for at least three hours.
  • Just before you serve, take rest of diced apple and saute.
  • Serve soup with diced aple dice.
