Chilled Apple Soup

- 6 tbsp. of butter shopping list
- unsalted 2 chopped leeks shopping list
- 5 c. of peeled and sliced granny smith apples shopping list
- 6 c. of unsalted chicken stock, preferably homemade shopping list
- 1 1/2-2 c. of potatoes, washed peeled and diced shopping list
- 1 c. of creme fraiche (or cream or sour cream) shopping list
- 2 tsp. of calvados shopping list
- 1/8 tsp. of cinnamon salt & freshly ground black pepper shopping list
- 2 peeled, diced and chopped apples shopping list
How to make it
- First you need to melt 4 tablespoons of the butter in a pan over medium flame.
- Then you can add the leeks, cover with a lid for approx. 5 minutes.
- Next you can add the 5 c. of apples and cook for approx 5 more minutes
- Then add the stock and the potatoes; let this boil; then you will reduce heat approx 45 minutes.
- Then you need to puree in blender.
- You will then stir in the creme fraishe or cream, the Calvados and cinnamon and season to taste with salt and pepper
- Chill in the refrigerate for at least three hours.
- Just before you serve, take rest of diced apple and saute.
- Serve soup with diced aple dice.
