Ingredients
  • 6 tbsp. of butter
  • unsalted 2 chopped leeks
  • 5 c. of peeled and sliced granny smith apples
  • 6 c. of unsalted chicken stock, preferably homemade
  • 1 1/2-2 c. of potatoes, washed peeled and diced
  • 1 c. of creme fraiche (or cream or sour cream)
  • 2 tsp. of calvados
  • 1/8 tsp. of cinnamon salt & freshly ground black pepper
  • 2 peeled, diced and chopped apples

Directions
  1. First you need to melt 4 tablespoons of the butter in a pan over medium flame.
  2. Then you can add the leeks, cover with a lid for approx. 5 minutes.
  3. Next you can add the 5 c. of apples and cook for approx 5 more minutes
  4. Then add the stock and the potatoes; let this boil; then you will reduce heat approx 45 minutes.
  5. Then you need to puree in blender.
  6. You will then stir in the creme fraishe or cream, the Calvados and cinnamon and season to taste with salt and pepper
  7. Chill in the refrigerate for at least three hours.
  8. Just before you serve, take rest of diced apple and saute.
  9. Serve soup with diced aple dice.
