Florentine Style Chicken

- 3 lbs chicken legs and/or thighs shopping list
- 1/2 c all purpose flour shopping list
- 1 Tbs olive oil shopping list
- 1 med. onion,peeled and chopped (about 1 c) shopping list
- 1 red bell pepper,peeled and cut into 2" long pieces shopping list
- 1 med. carrot,peeled and julienned shopping list
- 4 c broccoli florets shopping list
- 1 c chicken broth shopping list
- 1 can(15.5 oz)navy beans ,drained and rinsed shopping list
- 1 jar (15 oz) prepared low-fat alfredo sauce shopping list
- 1 bag (9oz) baby spinach shopping list
- 1/3 c shredded swiss cheese shopping list
How to make it
- Season chicken with salt and pepper,if desired. Place flour in resealable bag. Add1/3 chicken pieces to bag;close and shake gently to coat. Remove chicken pieces;repeat with remaining pieces.
- In Dutch oven over med-high heat,cook olive oil 30 secs. In 3 batches,cook chicken pieces 8 mins,or till browned,turning once;set aside
- Remove all but 1 Tbs drippings from dutch oven. Add onions,peppers and carrots. Cook 3 mins,stirring occasionally. Add brocolli,broth and chicken. Reduce heat to medium;cook 15 mins. Stir next 3 ingredients. Cook 5 mins or till heated through. sprinkle cheese over chicken. cover,cook 1 min.
