Spring Salad With Grapes And Pistacio Crusted Goat Cheese

- Salad: shopping list
- 1/4 c dry roasted pistachios,shelled and finely chopped shopping list
- 1/2 c (4oz) goat cheese shopping list
- 1 50z pkg spirng lettuce mix shopping list
- 1 c seedless red grapes,halved shopping list
- 1/4 tsp fresh ground black pepper shopping list
- Easy herb Vinaigrette: shopping list
- 9 Tbs white wine vinegar shopping list
- 1-1/2 Tbs wildflower honey shopping list
- 1/2 tsp sea salt shopping list
- 1 c canola oil shopping list
- 3 Tbs fresh chopped basil shopping list
- 3 Tbs fresh minced chives shopping list
How to make it
- Place pistachios in shallow dish. Divide cheese into 12 equal portions,rolling to for 12 balls. Roll each in pistachios until well coated. Set pistachio-crusred cheese balls aside.
- Combine Easy Herb Vinaigrette and greens in large mixing bowl and toss gently to coat evenly. Divide greens mixture evenly among 4 salad plates. Top each with 1/4 c grapes and 3 cheese balls. Sprinkle salad with pepper and serve.
- Easy Herb Vinaigrette:Combine first 3 ingredients in a medium bowl;slowly whisk in oil until combined. Stir in basil and chives. Store,covered,in refrigerator for up to 5 days.
