How to make it

  • Optional: soak the gammon overnight in cold water.
  • Preheat the oven to 170C (gas mark 3).
  • Wash the gammon, then pat dry with kitchen roll.
  • Put the the gammon and all the other ingredients in a large, flameproof casserole dish.
  • Bake in the oven for 1.5 hours.
  • Remove the lid and cook for an additional 30-45 minutes, until the sauce is starting to thicken.
  • Remove and slice the ham (you can give the sauce a blast on the hob to reduce it further it this point if necessary).
  • Serve with fresh toast or ask your wife to make some rolls to go with it.
  • Eat with friends.

    How I wish I could get my hands on some gammon ham here in Canada. I've looked for years with no luck. I have asked at deli's but no one knows what I'm talking about. It has the most incredible flavour, doesn't it. I love this recipe so I'm going to try it with a smoked picnic ham & hope it will turn out well. 5 forks. I remember so well a slice of gammon with eggs for breakfast growing up in England. Nothing can compare.
