Jerk chicken

- 1 x whole chicken cut into 8 (ask butcher to do this) shopping list
- 10g peppercorns shopping list
- 10g allspice shopping list
- 10g sea salt shopping list
- 5g mace shopping list
- 1/2 cinnamon stick shopping list
- 1 onion finely chopped shopping list
- large handful fresh thyme no twigs please! shopping list
- 2 scotch bonnet chillies cut in half shopping list
- 4-5 bay leaves shopping list
- 1 tablespoon brown sugar shopping list
- 3 tablespoons olive oil shopping list
- 30g butter shopping list
- juice of 2 limes shopping list
How to make it
- Preheat oven to 180 oc.
- Whizz the spices & sea salt in a grinder.
- Take 2 tablespoons of spice & place in a big bowl. Reserve the rest for next time
- Put all of the other ingredients in the bowl mix really well
- Marinate overnight
- Next day preheat oven to 180 oc
- Place chicken etc in a roasting tin bake for about 11/2 - 2hrs to ensure chicken is cooked through.
