Mediterranean Macaroni and Cheese

- coarse salt and ground black pepper shopping list
- 1/4 c (1/2 stick) unsalted butter,plus more for baking dish shopping list
- 1 can (14.5 oz) diced tomatoes,drained shopping list
- 1/3 c pitted kalamata olives,chopped shopping list
- 1/2 tsp dried oregano shopping list
- 8 oz elbow macaroni shopping list
- 1 garlic clove,minced shopping list
- 1/4 c flour shopping list
- 2 c whole milk shopping list
- 8 oz feta cheese,crumbled shopping list
How to make it
- Preheat oven to 400 degrees. Set large pot of salted water to boil and butter an 8" square baking dish. In small bowl,combine tomatoes,olives and oregano.
- Cook pasta 2 mins less than pkg. directs;drain and return to pot.
- Meanwhile,melt butter in med. saucepan over medium. Add garlic;cook until fragrant,1 min. Add flour and cook'stirring constantly,1 min. Whisk in milk and bring to boil. Reduce heat to med-low;simmer,whisking constantly until sauce thickens,3 mins.
- Remove from heat;whisk in 4 oz. of feta cheese. Stir in tomato mixture. Season with salt and pepper. Pour mixture over pasta,stir to combine.
- Pour pasta mixture into dish and top with 4 oz. of feta. Bake until sauce is bubbling and cheese begins to brown,20 to 25 mins.
