How to make it

  • peel and slice eggplant into 1/4 slices
  • [In a strainer] layer slices salting each one
  • place plastic wrap on top when fineshed salting
  • apply weight to the eggplant layers so the bitter juce comes out [purple] takes 1 to 1 1/2 hrs
  • rinse off each slice and pat dry
  • in small bowl beat 2 eggs
  • in another dish put bread crumbs
  • start coating each eggplant slice in beaten egg
  • fry until golden brown
  • place in brown bag to remove excess oil
  • in an oblong pan spread just enough gravy to cover bottom of pan
  • place slices next to each other then put shredded mossarella chese on each
  • same with gravy [not a lot!!!]
  • Cover with foil and bake 350 for 1 hour
