Emergency Chicken

- Some form of chicken: boned or boneless breast or thighs, or cut up chicken parts - (about 1 to1 & 1/2 lb.& cut in pieces if boneless, otherwise 1 piece per person) shopping list
- 1 quart stewed tomatoes (canned) shopping list
- about 32 oz. canned beans, cannelloni, kidney, black, whatever. shopping list
- 1 to 4 T minced garlic depending on your taste shopping list
- 1 small minced onion shopping list
- various italian seasonings - oregano, basil, crushed red pepper - some or all Start with 1t and taste shopping list
- 2T olive oil shopping list
- salt & pepper to taste shopping list
How to make it
- Brown the chicken well in a large, straight sided skillet or a dutch oven in 2T olive oil, add onion and garlic to pan & cook until onion is soft.
- Open all those cans and dump their contents on top of the chicken.
- Stir in chosen seasonings.
- Cover and cook at medium heat for about 15 min.
- If you would like more liquid add a bit of tomato juice, a small can of crushed tomatoes, a bit of chicken broth, white wine or even water - sometimes I do and sometimes not.
- Taste & add more seasonings if desired.
- Cook about another 10 minutes on low heat,; if you have time,simmer another 1/2 hour as flavor improves with time.
- Serve alone as a stew or serve over spaghetti or 'fettuccine or rice.
- Other than under-browning the chicken, you can't make this wrong.
