How to make it

  • Brown the chicken well in a large, straight sided skillet or a dutch oven in 2T olive oil, add onion and garlic to pan & cook until onion is soft.
  • Open all those cans and dump their contents on top of the chicken.
  • Stir in chosen seasonings.
  • Cover and cook at medium heat for about 15 min.
  • If you would like more liquid add a bit of tomato juice, a small can of crushed tomatoes, a bit of chicken broth, white wine or even water - sometimes I do and sometimes not.
  • Taste & add more seasonings if desired.
  • Cook about another 10 minutes on low heat,; if you have time,simmer another 1/2 hour as flavor improves with time.
  • Serve alone as a stew or serve over spaghetti or 'fettuccine or rice.
  • Other than under-browning the chicken, you can't make this wrong.
