Hens and Potatoes

- 2 Tbs olive oil shopping list
- 2 lbs. idaho potatoes,peeled shopping list
- 8 cloves garlic,crushed shopping list
- 4 rosemary sprigs shopping list
- 2 Cornish hens,split lengthwise shopping list
- salt,pepper shopping list
- Optional:20 grape tomatoes,halved,balsamic vinegar and more olive oil shopping list
How to make it
- Line 2 rimmed baking sheets with nonstick foil. Slice potatoes intp 1/8" thick rounds;toss with 1 Tbs olive oil. Arrange in overlapping rows on one baking sheet. Season with salt and pepper;top with garlic and rosemary.
- Roast at 450 degrees for 40 mins or till brown-edged and cooked through
- When potatoes go into the ovenrub the hens with 1/2 Tbs oil,salt and pepper. Place,cut side down on other sheet. Roast for 25 to 30 mins or till cooked through.
- If desired,toss tomatoes wirth a little balsamic and oil and spoon over hens.
