Natural Citrus Cake

- 1 Natural Box cake mix (see my other recipes) shopping list
- 2 eggs shopping list
- 1 cup milk shopping list
- 1 teaspoon vanilla extract shopping list
- For vegan: substitute 1/2 cup applesauce for eggs and substitute 1 cup plain unsweetened soy milk, where there is ONLY soybeans and water on the ingredients. Any other ingredients, even when it says unsweetened, can alter the taste. shopping list
- Citrus Flavors: 1 teaspoon zest from lemon, lime or orange plus 1/4 cup fresh squeezed juice. Do not reduce the other liquid in the recipe. This cake will be fluffier as the acid will react with the baking powder in the "mix". For gourmands, use blood oranges or key lines for a more adult version. shopping list
How to make it
- Preheat oven to 350°F
- "Butter" with vegan shortening and flour a 9- x 13-inch cake pan, or two 8-inch round cake pans; set aside.
- Transfer cake mix to large mixing bowl, then add eggs, milk and vanilla.
- Beat with an electric mixer on low speed for 1 minute and scrape bowl. Increase speed to medium high and beat for 2 minutes more, scraping sides of bowl occasionally.
- Transfer batter to prepared baking pan(s).
- For a 9- x 13-inch cake, bake for 40 to 50 minutes, or until done when tested with a toothpick.
- For two 8-inch cakes, check after 25 to 35 minutes.
- Set cakes aside to cool for about 10 minutes, remove them from the pans and set aside on wire racks to cool completely.
- Frost cakes, if desired.
