Chicken Asparagus Roll-Ups

- 1/2 cup mayonnaise shopping list
- 3 tablespoons Dijon mustard shopping list
- 1 lemon, juiced and zested shopping list
- 2 teaspoons dried tarragon shopping list
- 1 teaspoon ground black pepper shopping list
- 1/2 teaspoon salt shopping list
- 16 spears fresh asparagus, trimmed shopping list
- 4 skinless boneless chicken breast halves, pounded to about 1/4 inch thickness shopping list
- 4 slices provolone cheese shopping list
- 1 cup panko bread crumbs shopping list
How to make it
- Preheat oven to 475
- Grease a baking dish
- In a bowl, mix together the mayo, mustard, lemon juioce, zest, tarragon, salt and pepper until the mixture is well combined
- Set aside
- Cook asparagus in the microwave on high until bright green and just tender, 1 to 1 1/2 minutes
- Place one slice cheeses on each prepared chicken breast and top with 4 asparagus spears per breast
- Roll the chicken around the cheese and asparagus, making a tidy package
- Place seam side down in the prepared dish
- With a brush, apply a thin coating of the mayo mixture to each breast and sprinkle each with panko crumbs, pressing the crumbs into the chicken to make a coating
- Bake until the crumbs are browned and the chicken juices run clear, about 25 minutes
