How to make it
- -in medium saucepan, heat milk and rice, stirring frequently so milk does not burn. Bring to a slow simmer.
- -in a seperate bowl, combine eggs, sugar and vanilla. when rice has soaked up half of the milk, add egg mixture to the pot.
- -allow to cook for just a few more minutes or when there is only a little milk left, stirring occasionally.
- -eat while still hot or chill in the fridge and eat cold. good for dessert or as a snack. can also be made into a breakfast pudding by adding raisins, dates etc.
