Tortellini Kabobs

- 2/3 c. oil and vinegar dressing shopping list
- 3 tblsp. basil pesto shopping list
- 2 c. cheese tortellini(i like "fresh" but frozen is ok) shopping list
- 8 oz. cheddar or pepper jack, 1/2 in. cubes shopping list
- 30 olives, pimiento stuffed and kalamata shopping list
- 30 red and/or green pickled peppers shopping list
- 15 6 inch wooden skewers shopping list
How to make it
- for marinade
- in a medium bowl combine the vin. and oil and the pesto, set aside
- Cook tortellini accordingly
- drain, rinse, and drain again
- on the skewers, alternately thread the tortellini, cheese cubes, olives
- and peppers.
- Brush with the marinade
- allow to chill 3-4 hours.
- if transporting, keep cold
