Chipotle Salmon and Mango Salsa

- -1/4 cup olive oil shopping list
- -4 tblsp lime juice shopping list
- -1/2 tblsp minced garlic shopping list
- -salmon (cut into 4 serving slices-1 inch thick) shopping list
- -1 mango, peeled, seeded, pitted and chopped shopping list
- -1/4 of a red onion, chopped shopping list
- -4 tblsp chopped fresh cilantro shopping list
- -2 tblsp honey shopping list
- -2 tblsp canned chipotle chile pepper with adobo sauce, minced shopping list
How to make it
- -in small bowl ,combine oil, lime juice and garlic. Clean salmon in water, patting dry with paper towels. Place salmon in a shallow baking dish. Pour oil mixture over; turn to coat salmon. Marinate at room temperature for 20 minutes.
- -meanwhile, for salsa, in a medium bowl combine mango, onion and cilantro.
- -drain salmon. olace salmon on oiled rack of a grill over medium hot coals. grill for 5 to 6 minutes or until salmon flakes when tested with a fork, turning once.
- -in small bowl, mix honey and chipotle with adobo sauce and brush over both sides of each salmon slice. serve with mango salsa.
- *also tastes delicious on top of salad greens with a mango vinagrette or dressing.*
