How to make it

  • Trim just enough off each end to enable the halves to stand up on a shallow baking dish.
  • Remove seeds with a spoon.
  • Lightly spray dish with cooking spray and place squash cup side down in baking dish.
  • Bake at 350 for 30 minutes then remove from oven.
  • Meanwhile form sausage into small balls and brown in a skillet.
  • Drain well on paper towels.
  • When squash has been removed from oven turn each half cup side up.
  • Put a tablespoon butter and 1 tablespoon brown sugar in cavity of each.
  • Fill each half with sausage balls then drizzle a tablespoon or so of honey over sausage.
  • Return to oven and bake another 30 minutes.
