Acorn Squash with Creamed Onions

- 3 acorn squash shopping list
- 1 teaspoon salt shopping list
- 2 pounds small white onions peeled shopping list
- 1/2 cup golden raisins shopping list
- 2 tablespoons butter shopping list
- 2 tablespoons flour shopping list
- 1/4 teaspoon salt shopping list
- 1-1/2 cups milk shopping list
- 1/4 teaspoon ground nutmeg shopping list
How to make it
- Wash squash then cut in half lengthwise and remove seeds.
- Place squash cut side down in baking pan and add a few tablespoons water to pan.
- Bake at 400 for 30 minutes.
- Turn cut side up and sprinkle with salt and continue baking 30 minutes until tender.
- Cook onions in boiling salted water covered for 30 minutes then drain.
- Simmer raisins in water to cover 10 minutes then drain.
- Melt butter then blend in flour and salt.
- Add milk all at once then cook and stir until sauce is thickened.
- Blend in nutmeg then gently stir in onions and raisins.
- Spoon into cooked squash halves and sprinkle with additional nutmeg.
