Alaska Brunch Frittata

- 1 small bell pepper cored and chopped shopping list
- 1/2 cup chopped red onion shopping list
- 1 garlic clove peeled and minced shopping list
- 14-3/4 ounce can salmon drained and chunked shopping list
- 6 eggs shopping list
- 1/3 cup milk shopping list
- 2 teaspoons taco seasoning shopping list
- 1/3 cup shredded cheddar cheese shopping list
- 1-1/2 cups salsa shopping list
How to make it
- Heat oven to 400 then spray skillet with nonstick cooking spray.
- Stir in bell pepper, onions and garlic then sauté two minutes over medium heat and add salmon.
- Beat together eggs, milk and seasoning then pour over vegetables in pan.
- Cook eggs over medium low heat omelet style until sides are set about 5 minutes.
- Sprinkle with cheese then transfer pan to oven 5” from heat.
- Bake an additional 5 minutes then cut into wedges and serve each slice with 1/4 cup salsa.
