How to make it

  • Mix together the flour, cornmeal, sugar, baking powder, salt, and cinnamon
  • Whisk together the milk, vanilla extract and egg yolks
  • Stir the wet mixture into the dry and let sit for 5 minutes to thicken
  • Beat the egg whites until peaks form
  • Stir the banana and walnuts into the batter
  • Fold the egg whites into the batter
  • In a skillet or a flat grill pan pour 1/4 cup of batter and cook about a minute on each side
