Meatloaf Cake With Potatoe Icing Recipe

Ingredients
  • extra lean ground beef
  • mushrooms (1 cup)
  • crushed tomatoes (1 Can)
  • peas (1/2 cup)
  • carotts (1/2 cup)
  • corn (2/3 cup)
  • 3 eggs
  • 1 bag nugget potatoes (red or gold)
  • brocolli (1 cup)
  • heavy cream (2 Tblsp)
  • butter (to taste)
  • minced garlic (2-3 tblsp)

Directions
  1. Pre heat oven to 350 degrees
  2. grease two round baking pans (cake pans)
  3. Boil large pot of water
  4. chop up veggies into small pieces
  5. mix beef, veggies (except brocolli), garlic and eggs in large bowl
  6. pack mixed ingredients into cake pans and place in oven
  7. Bake for 40 minutes, or until meatloaf is pulling away from sides of cake pans
  8. Boil potatoes until tender, then put in food processor
  9. Add butter, heavy cream and choped brocolli to food processor as well and blend unitl fluffly. (brocolli will make "icing" green, but you can use any veggir, or food colouring)
  10. Remove two meatloaf halves from oven, and from pans. Place one meatloaf on platter.
  11. Use your food processed potatoe mixture to ice the top of the meatloaf, then place other meatloaf half on top.
  12. Continue to "ice" your double layered meatloaf cake all around, and put some potatoe mixture ina piping bag to decorate the top.
  13. garnish with whatever veggies you want on top, and serve lie a cake!
