Meatloaf cake with potatoe icing

- extra lean ground beef shopping list
- mushrooms (1 cup) shopping list
- crushed tomatoes (1 Can) shopping list
- peas (1/2 cup) shopping list
- carotts (1/2 cup) shopping list
- corn (2/3 cup) shopping list
- 3 eggs shopping list
- 1 bag nugget potatoes (red or gold) shopping list
- brocolli (1 cup) shopping list
- heavy cream (2 Tblsp) shopping list
- butter (to taste) shopping list
- minced garlic (2-3 tblsp) shopping list
How to make it
- Pre heat oven to 350 degrees
- grease two round baking pans (cake pans)
- Boil large pot of water
- chop up veggies into small pieces
- mix beef, veggies (except brocolli), garlic and eggs in large bowl
- pack mixed ingredients into cake pans and place in oven
- Bake for 40 minutes, or until meatloaf is pulling away from sides of cake pans
- Boil potatoes until tender, then put in food processor
- Add butter, heavy cream and choped brocolli to food processor as well and blend unitl fluffly. (brocolli will make "icing" green, but you can use any veggir, or food colouring)
- Remove two meatloaf halves from oven, and from pans. Place one meatloaf on platter.
- Use your food processed potatoe mixture to ice the top of the meatloaf, then place other meatloaf half on top.
- Continue to "ice" your double layered meatloaf cake all around, and put some potatoe mixture ina piping bag to decorate the top.
- garnish with whatever veggies you want on top, and serve lie a cake!
