Pork Pasta

- 1 package broad noodles (or your favorite pasta) shopping list
- 1 1/2 pounds pork loin shopping list
- 3 roma tomatoes shopping list
- 12 (or more) cherry tomatoes shopping list
- 2 medium sized bell peppers (orange and yellow shopping list
- 4 oz V8 juice shopping list
- italian seasoning to taste shopping list
- Spike (this is a great all round herb and spice mix) shopping list
- cayenne pepper shopping list
- olive oil shopping list
- balsamic vinegar shopping list
How to make it
- Cut pork into bite sized cubes and place in a bowl
- Drizzle olive oil over meat then add about a tablespoon of Balsamic and mix
- Add Italian seasoning (about a tlbspn) and spike (about a tspn) and set aside
- Cut peppers and tomatoes into pieces
- Start water for pasta and add pasta when a rolling boil is achieved (dont forget to salt the water)
- Heat a large work with a little olive oil and brown the pork about 5mins
- Remove pork leaving juice in wok and add peppers and cook for 5 mins
- Reduce heat on wok to just below medium and add pork back in with diced roma tomatoes
- Add V8 juice
- Add 1/2 tspn cayenne pepper
- Drain cooked pasta and add to wok
- add cherry tomatoes and stir until all of the past is blended with juice in the wok
- remove from heat and cover for a couple minutes( this allows cherry tomatoes to warm up nicely)
- sprinkle with dry parsley and serve
