Baked Blackberry Cheesecake

- 3/4 cup cottage cheese shopping list
- 2/3 cup plain yogurt shopping list
- 1 tablespoon all purpose whole wheat flour shopping list
- 2 tablespoons raw sugar shopping list
- 1 egg shopping list
- 1 egg white shopping list
- Finely grated rind and juice of 1/2 lemon shopping list
- 2 cups fresh blackberries shopping list
How to make it
- Preheat oven to 350.
- Lightly grease and base line a square cake pan.
- Place cottage cheese in a food processor and process until smooth.
- Add yogurt, flour, sugar, egg and egg white and mix well.
- Add lemon rind, juice and berries reserving a few for decoration.
- Tip mixture into prepared pan and bake 35 minutes.
- Turn off oven and leave a further 30 minutes.
- Run a knife around edge of cheesecake then turn it out.
- Remove lining paper and place cheesecake on a warm serving plate.
- Decorate cheesecake with reserved berries and serve it warm.
