Baked Blackberry Cheesecake Recipe

How to make it

  • Preheat oven to 350.
  • Lightly grease and base line a square cake pan.
  • Place cottage cheese in a food processor and process until smooth.
  • Add yogurt, flour, sugar, egg and egg white and mix well.
  • Add lemon rind, juice and berries reserving a few for decoration.
  • Tip mixture into prepared pan and bake 35 minutes.
  • Turn off oven and leave a further 30 minutes.
  • Run a knife around edge of cheesecake then turn it out.
  • Remove lining paper and place cheesecake on a warm serving plate.
  • Decorate cheesecake with reserved berries and serve it warm.
