Turkey Zucchini Pinwheel

- 8 oz. egg noodles shopping list
- 12 oz. turkey breast cutlets shopping list
- 1/2 c flour shopping list
- 4 Tbs olive oil,divided shopping list
- 2 small zucchini,trimmed and sliced shopping list
- 1 small eggplant,trimmed,peeled and cubed shopping list
- 1 med. onion,peeled and diced shopping list
- 1 c prepared marinara sauce shopping list
- 1/2 c chicken broth shopping list
- 1 Tbs balsamic vinegar shopping list
- 3 tomatoes,sliced shopping list
- 4 oz part-skim mozzarella cheese,sliced shopping list
How to make it
- Heat oven to 400 degrees. Cook noodles according to directions;transfer to greased casserole dish Season turkey with salt and pepper;if desired. Place flour in resealable plastic bag;add turkey. Shake gently to coat.
- In skillet over med-high heat,cook turkey in 2 Tbs olive oil 4 mins. or till browned. Remove turkey from pan. In same skillet,cook zucchini 4 mins;remove from pan. Add remaining oil to skillet. Add eggplant and onions;cook 5 mins. Stir in next 3 ingredients.
- Increase heat to high;bring mixture to a boil. Reduce heat to medium'let simmer 5 mins. Pour sauce mixture over noodles;toss gently to coat. Fan turkey,zucchini,tomatoes and cheese over noodles. Bake 10 mins.
