Rice With Shredded Cabbage

- 2 cups rice shopping list
- 1-1/2 pounds white onions cubed small shopping list
- 1/2 pound tomatoes cubed shopping list
- 2/3 cup olive oil shopping list
- 3 tablespoons pine nuts shopping list
- 3 tablespoons black currents shopping list
- 1 tablespoon salt shopping list
- 1 teaspoon sugar shopping list
- 2 tablespoons dried mint shopping list
- 3 cups water shopping list
- 1-1/2 pound shredded cabbage shopping list
How to make it
- Put olive oil, onions, pine nuts and salt in a large pot for 20 minutes.
- Add rice and continue frying for 5 minutes stirring constantly.
- Add tomatoes and continue frying 5 minutes more stirring.
- Add currants, mint, sugar and 1 cup water and stir once.
- Bring to a gentle boil then cover and cook until water is absorbed.
- Turn off heat and let stand covered for 30 minutes.
- Cook cabbage 10 minutes in a lightly salted water then rinse and squeeze the water out.
- Cut in 1/2" strips then mix with rice.
- Add remaining 2 cups water then stir once and cover then cook over low until water is gone.
- Let cool covered then serve at room temperature.
