How to make it

  • Melt butter in a large soup pot. Add onions, carrot, garlic and ginger. Cook over medium-low heat until veggies have wilted. About 10 minutes.
  • Add tomatoes & juice, basil, sugar and salt & pepper. Cook for 5 minutes.
  • Then add stock and coriander. Slowly bring to a boil over medium heat. Reduce heat, partially cover and simmer 50 minutes.
  • Puree soup, add coconut milk and adjust seasoning, heat through and serve.
