Thai Tomato Soup

- 4 TB butter shopping list
- 2 onions, sliced thin shopping list
- 1 large carrot, peeled and chopped shopping list
- 6 cloves garlic, coarsely chopped shopping list
- 1 thumb sized piece ginger, peeled & grated shopping list
- 1 qt of canned plumb tomatoes w/juice shopping list
- 12 fresh basil leaves, chiffonaude shopping list
- ¼ tsp sugar shopping list
- 1 qt chicken broth shopping list
- ½ tsp coriander shopping list
- 2 cans coconut milk shopping list
- salt & pepper to taste shopping list
How to make it
- Melt butter in a large soup pot. Add onions, carrot, garlic and ginger. Cook over medium-low heat until veggies have wilted. About 10 minutes.
- Add tomatoes & juice, basil, sugar and salt & pepper. Cook for 5 minutes.
- Then add stock and coriander. Slowly bring to a boil over medium heat. Reduce heat, partially cover and simmer 50 minutes.
- Puree soup, add coconut milk and adjust seasoning, heat through and serve.
