How to make it

  • Wash the tomatoes and make a shallow cross cut on the botton just enough to cut the peel
  • Put the tomatoes in a pot and cover with water and boil them until the peel start coming off
  • Drain the tomatoes and using a cloth or paper towell to protect the hands peel them while they are still hot and chop them peferably over a dish not to waste the tomatoe juice
  • Chop the onion and garlic
  • In a frying pan put some olive oil and fry the onion and garlic for a couple of minutes not letting them get dark
  • Add the tomatoes, fry for another couple of minutes
  • Add the fresh basil
