Marinated Garbanzo Beans

- 1-15oz. can garbanzo beans, undrained shopping list
- 2-3 cloves of garlic, minced shopping list
- 1/2 teaspoon dried rosemary, crushed shopping list
- 1 cup water shopping list
- 1/4 cup extra virgin olive oil shopping list
- 2 tablespoons red wine vinegar shopping list
- 1/2 teaspoon salt shopping list
- 1/8 teaspoon black pepper shopping list
- 1/2 teaspoon dried parsley shopping list
- 1/2 teaspoon (or to taste) crushed red pepper flakes, optional shopping list
How to make it
- In a saucepan, combine undrained beans, garlic, rosemary and water.
- Bring to a boil.
- Reduce heat and simmer, covered, for 15 minutes; drain.
- In a bowl, combine olive oil, vinegar, salt, pepper, parsley and pepper flakes (if using).
- Whisk until combined.
- Pour beans in bowl and toss to coat.
- Cover and refrigerate overnight, stirring occasionally.
- Serve and enjoy!
