How to make it

  • Preheat oven to 375 degrees.
  • Place thawed turkey legs in a large roasting pan.
  • Pour stewed tomatoes over legs allowing some to fall into pan. These will make a wonderful juice that can be served on the side.
  • Cut each potato into 8 to 10 equal pieces and place around the turkey legs. Pour olive oil over everything in the pan. Add 1/4 cup water.
  • Sprinkle breadcrumbs, parsley, salt, and pepper over everything and bake for 30 minutes. Turn legs over and baste. Continue to roast for 30 minutes more. Meat will be falling off the bone.
  • Best served with green salad, asparagus or corn and biscuits. I hope you enjoy as much as we did.
