Black Bean Salad with Peppers and Cumin Vinaigrette

- 1-1/4 cups dried black beans soaked shopping list
- 4 cups water shopping list
- 1 bay leaf shopping list
- 1/2 teaspoon salt shopping list
- 1 tablespoon red wine vinegar shopping list
- 1 clove garlic minced shopping list
- 1/4 teaspoon cumin shopping list
- 1 teaspoon hot pepper sauce shopping list
- 1 tablespoon chopped cilantro shopping list
- 2 tablespoons olive oil shopping list
- 1/2 red pepper diced shopping list
- 1/2 yellow pepper diced shopping list
- 1/2 green pepper diced shopping list
- 1 red onion diced shopping list
- 4 scallions thinly sliced shopping list
How to make it
- Drain beans and rinse well then put in large pot with water and bay leaf.
- Bring to a boil then simmer 1-1/2 hours and drain well.
- Combine salt, vinegar, garlic, cumin, hot pepper sauce, cilantro and olive oil in a small bowl.
- Pour over warm beans then toss well and add remaining ingredients.
- Toss gently then garnish with fresh cilantro and serve at room temperature.
