How to make it

  • Preheat oven to 400 degrees
  • Two 12-cup muffin tins, lined with paper liners
  • In a large bowl, mix together eggs, biscuit mix, milk, sugar, water, and oil just until moistened. There may be lumps, which is fine. Gently fold in raspberries and macadamia nuts.
  • Scoop batter evenly into prepared muffin tins. Bake in preheated oven until golden brown, 15 to 18 minutes. Let cool for 10 minutes before removing from tin.
