How to make it

  • - in a bowl, sift together icing sugar and flour. with a fork, mix in butter until there are very little crumbs. stir in eggs and vanilla until a moist dough forms. add more butter if dough is too dry or more flour if dough is to greasy.
  • -shape dough into 1 1/2 inch balls and press into tart molds, covering bottom and a half inch higher than the sides. with a fork, press the dough on the sides down, making little indents in the dough with the fork.
  • -preheat oven to 450F.
  • -in medium saucepan, combine sugar and water and bring to a boil. cook and tir until the sugar is completely dissolved. take off heat and let cool.
  • -strain eggs through a sieve and whisk into sugar/water mixture. etir in vanilla and evaporated milk.
  • -strain filling through a sieve and fill tart shells,
  • -bake in oven for 15-2o minutes or until the tart shell is golden brown and the shelll and filling is slightly puffed.
  • -enjoy!
