Mardi Gras Party Cake

- 2/3 cup butterscotch morsels shopping list
- 1/4 cup water shopping list
- 2 1/4 cup sifted flour shopping list
- 1tsp salt shopping list
- 1/2 tsp soda shopping list
- 1/2 tsp baking powder shopping list
- 1 1/4 cup sugar shopping list
- 1/2 cup shortening shopping list
- 3 unbeaten eggs shopping list
- 1 cup buttermilk shopping list
- Melt butterscotch morsels in water. Cool. Sift together all dry ingredients except sugar and set aside. Cream sugar and shortneing. Blend in unbeaten eggs, beating well after each addition. Blend in melted morsels, mix well. Add the dry ingredients alternately with milk, beginning and ending with dry ingredients. Blend well after each addition. Pour into two 9" layer pans well greased adn floured. Bake at 375 for 25-30min. Cool. Spread filling between layers and on top within 1/2 inch of edge. Frost sides w/ Seafoam frostingor whipped cream. shopping list
How to make it
- Butterscotch filling
- 1/2 cup sugar
- 1 Tablespoon cornstarch
- 1/2 cup evaporated milk
- 1/3 water
- 1/3 butterscotch morsels
- 1 beaten egg yolk
- 2 tablespoons butter
- 1 cup coconut
- 1 cup chopped nuts
- Mix forst 6 ingredients together in saucepan. Cook over medium heat stirring constantly until thick. Remove from heat; add butter, coconut and nuts. Cool.
- Sea foam frosting
- 1/3 cup sugar
- 1/3 cup packed brown sugar
- 1/3 cup water
- 1 egg white
- 1/4 teaspoon cream or tartar
- 1 Tablespoon corn syrup
- Cook until a little syrup dropped in cold water forms a soft ball (aroung 236). Beat egg white with cream of tarter until stiff peaks form. Add syrup to beaten egg white in slow stream, beating until thick.
