Caramel Banana Muffins

- 1/4 cup shortening shopping list
- 1 cup sugar shopping list
- 1 egg shopping list
- 1 1/2 cup mashed ripe bananas shopping list
- 1 tsp vanilla extract shopping list
- 1 1/2 cup of flour shopping list
- 1 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- caramel Icing shopping list
- 2 tablespoons butter shopping list
- 1/4 cup brown sugar shopping list
- 1 tablespoon milk shopping list
- 1/2 cup powered sugar shopping list
How to make it
- In a small bowl, cream shortening and sugar. Add egg and beat well. Add bananas and vanilla. Mix well. Combine the flour, baking soda and salt. Add to cream mixture. Fill paper lined muffin cups 3/4th full. Use jumbo cups if you have them. Bake for 20-28 minutes (jumbo) sized or 17-25 mins for regular muffine size. A toothpick should come out clean. Cool for 5 minutes before removing to wire rack.
- Icing------ Melt butter in a small saucepan over medium heat. Stir in brown sugar and milk. Bring to a boil. Cool slightly. Whisk in powdered sugar. Transfer to a small plastic bag. Cut a small hole in a corner of bag and drizzle over muffins.
