How to make it

  • Soak morels in very salty water if you gathered them from the woods, this removes any bugs that may be habitating in them
  • Rinse, rinse, then rinse again to get rid of any dirt
  • Slice in half, lengthwise
  • Dry them enough so they aren't dripping, they should be somewhat moist so the flour will stick
  • Melt butter in a heavy skillet over medium heat
  • Toss some morels in the flour
  • Place them in the sizzling butter, make sure they have room to cook, don't crowd the pan
  • Fry for 2 minutes each side until golden brown
  • Remove to a plate covered with paper towel to absorb any excess oil
  • Salt hot morels lightly,
  • Fry more morels!!
  • As i said in the ingredients i use 1 stick of butter for 2 fryings of the morels, after that the butter and flour start to burn and makes them taste less than stellar.
