- 1 1/2 pounds pork, boneless loin, cut into 1-inch cubes shopping list
- 1 medium onion(s), coarsely chopped shopping list
- 1 medium pepper(s), green, bell, coarsely chopped shopping list
- 1 clove(s) garlic, minced shopping list
- 1 tablespoon oil, vegetable shopping list
- 1 tablespoon flour, all-purpose shopping list
- 32 ounce(s) tomatoes, crushed, 2 cans shopping list
- 1 can(s) beans, red kidney, 16-oz can shopping list
- 1 can(s) tomato sauce, 8-oz can shopping list
- 3 tablespoon chili powder shopping list
- 1 tablespoon cumin, ground shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon pepper, black shopping list
- 1 1/2 cup(s) cheese, cheddar, shredded, (6 oz) shopping list
- 8 tortilla(s), whole-wheat, low carb, optional shopping list
How to make it
- In a 4-quart Dutch oven cook pork, onion, green pepper, and garlic in hot oil until pork is browned. Stir in flour, mixing well. Add the remaining ingredients, except cheese and tortillas. Simmer, uncovered, one hour.
- Top each serving with some of the cheese. Serve with tortillas if desired.
