Turkey Breast with Southwest Stuffing

- 2 1/2 Lb. turkey breast shopping list
- 2 tsp. butter or margarine shopping list
- 1/2 each chili powder & dried oregano leaves shopping list
- 1 cup chopped onion shopping list
- 1/2 cup finely chopped celery shopping list
- 2 cloves of garlic shopping list
- 4 TBSP. butter or margarine shopping list
- 6-8slices cracked wheat bread cubed(about 3 cups) shopping list
- 1 can (41/2 oz) sliced black olives (drained) shopping list
- 3/4 cup chicken broth shopping list
- 1/4 cup half & half shopping list
- 2 TBSP. chopped parsley shopping list
- 1-2 TBSP. chili powder shopping list
- 1/2 tsp. black pepper shopping list
How to make it
- Rub turkey skin with butter.
- Sprinkle with chili powder & oregano.(set aside)
- Saute onions celery & garlic in butter until soft & transparent
- Stir in bread crumbs, olives, broth, half & half, parsley,
- chili powder, & black pepper
- Make a mound of the stuffingin the baking dish.
- Place the turkey breast on top
- Bake @ 375 for 1 1/4 to 1 1/2 hrs. or until; clear juices runs from
- the breast when pricked with fork
- Tips:
- When roasting poultry, leave skin on for natural basting.
- Remove the skin afterwards if you are on a low fat diet.
- No extra salt is added to stuffing. Salt is in the butter, olives
- & bread
